Menu Plan Monday

Last week’s menu plan went fairly well, although we had so many leftovers from the fondue that we had soup for a couple of nights instead of what was planned.  Also, in my meal planning last week, I forgot that Friday was Sweet Pea’s Gotcha Day.  She requested pancakes that evening so we changed our plans.

I highly recommend not fonduing with lots of kids.  They were safe about it and they really enjoyed it, but it was hard for them to wait so long for everything to cook.  Plus, it seems we spent so much time cooking for them that it was forever before we ate.  It was a great fun, but it may be a looong time before we do it again.  🙂

Here’s the plan for this week:

Monday:  Macaroni & Beef casserole, salad, mashed potatoes (holdover from last week)

Tuesday:  Mexican food–Tacos or burritos, Spanish rice, chips and salsa

Wednesday:  Sandwiches/Soup before church

Thursday:  Tuna Casserole, Steamed Veggies, New Potatoes

Friday:  Eat out! 

Saturday:  Our church is sending a missions team to Japan this May.  In preparation for that, they are coming to our house to discuss the trip and have some Japanese food.  We will have Shogayaki, Rice, Gyoza, and maybe Miso Soup of I can find the right ingredients (this is difficult where we live).

Sunday:  Leftovers

I also will be making an Indian dish for a children’s class at church this weekend.  If anyone has an easy Indian rice dish recipe with authentic flavor, I’d be most grateful if you would send it to me!
