Menu Plan Monday

Last week, we actually stuck to our menu plan every day except one.  As a result, we ate good food and spent less money eating out.  Yea!  This week is going to be pretty busy, so I have tried to keep the meals fairly simple.  For the most part, they are crockpot meals or meals where the meat is already cooked and frozen, waiting to be added to something, or they are juts super easy, like breakfast for lunch.

Monday: Easy Chicken Casserole, Salad

Tuesday: Leftovers

Wednesday: Good Luck Soup, Cornbread

Thursday: Tacos

Friday: Crispy Baked Chicken, Broccoli, Bread

Saturday: Watching the GA/AU game with friends–munchies

Sunday: Breakfast for Lunch–Biscuits, Eggs, Sausage

Here is another fall recipe for you to enjoy:

Pumpkin Dump Cake

1 lg can Pumpkin
2 eggs
2/3 C evaporated milk
1 box yellow cake mix
1 C pecans, crushed
2 sticks butter, sliced
*************************************************

Mix pumpkin with 2 eggs and 2/3 C evaporated milk. Place in casserole dish. Top with yellow cake mix. Sprinkle pecans on top and spread sliced butter. Bake at 350° for 40 minutes.

This recipe was given to me by the wife of the music minister where we attended church several years ago, and it is delicious!
