Menu Plan Monday: September 17, 2007

 

Last week, we did a fairly good job of sticking to our menu plan.  We finally tried the Peppery Breaded Pork Chops, which were spicy but wonderful.  They may have been a bit spicier than anticipated because I was out of ground red pepper and used crushed red pepper instead.  But, no problem for our family–we like spicy food!  My family rated it √√√√, so we’ll definitely plan to make it again soon (I know that’s a square root sign instead of a check, but I can’t figure out how to use a check mark in Word Press–any tips?).  They were moist, flavorful, and oh-so-easy to pull out of the freezer and bake.  Best of all, the breading stayed crispy, which I was really unsure about given that the pork chops had to thaw before baking.

 This week’s menu is tentatively planned as follows:

Monday:  Dinner at my sister’s place!  I’m bringing chicken enchiladas (a carryover from last week) and spanish rice, she’ll have the fixin’s (sour cream, guacomole, salsa, chips, etc.) and dessert.  Then, the kids will be able to enjoy the new, cooler fall weather on their cousins’ new backyard playset.

Tuesday:   Bacon Cheeseburger Rice, salad, fruit (after clicking the link, you must scroll through a list of recipes to reach this one)

Wednesday:  Leftover Buffet

Thursday:   BBQ Chicken Basil Calzones, chips, fruit 

Friday:  Curry Rice followed by a Coffee & Cookies lecture and fellowship at the kids’ school

Saturday:  Football snack food (chips & dip, meatballs, etc.)

Sunday:  Church wide picnic at the park!  I’ll be bringing a dessert and a drink.

I’ve really enjoyed my first round of freezer cooking in terms of meals being easier to prepare in the evenings, but one thing I have missed is trying new recipes.  So, after this week, I think we will continue freezer cooking, but always plan for something not in the freezer at least once a week.
